A fresh Salmon Salad topped with grilled salmon, cherry tomatoes, cucumbers, and edamame, drizzled with a rich ginger sesame dressing.

Ingredients:

 

For the Salmon:

  • 1 Fishta Salmon Portion
  • Salt and pepper, to taste
  • For the Dressing:
  • 2 tbsp soy sauce
  • 2½ tbsp rice wine vinegar
  • 1 tbsp sesame oil
  • 3 tbsp olive oil
  • 1½ tsp sugar
  • 2 tsp grated ginger
  • ½ tsp black pepper

For the Salad:

  • 2 cups lettuce, chopped
  • ½ cup cherry tomatoes, halved
  • ½ cup cucumber, sliced
  • ¼ cup edamame (optional)

 

Instructions:

  1. Cook the salmon – Season the Fishta Salmon with salt and pepper. Cook in a pan over medium-high heat for 3-4 minutes per side. Set aside.
  2. Make the dressing – In a small bowl, mix soy sauce, rice wine vinegar, sesame oil, olive oil, sugar, grated ginger, and black pepper. Stir well.
  3. Assemble the salad – In a large bowl, combine lettuce, tomatoes, cucumber, and edamame.
  4. Add the salmon – Place the cooked salmon on top, then drizzle with the ginger sesame dressing.
  5. Serve and enjoy!
