Ingredients:
- 2 Fishta Tilapia Fillets
- Salt and pepper, to taste
- 2 cloves garlic, minced
- ½ onion, sliced
- 1 thumb-sized ginger, cut into strips
- 1 cup coconut milk
- ½ tbsp fish sauce
- ¼ tsp black pepper
- 1 cup spinach
- Cooking oil, for frying
Instructions:
- Season the tilapia with salt and pepper, then fry until golden brown. Set aside.
- Sauté aromatics – In a pan, sauté garlic, onion, and ginger until fragrant.
- Simmer in coconut milk – Pour in the coconut milk and let it simmer for 3 minutes.
- Add the fish – Place the fried tilapia in the sauce. Season with fish sauce and black pepper. Simmer for 5 minutes.
- Add spinach – Stir in the spinach and cook for 1 more minute.
- Serve hot with rice. Enjoy!
