Ingredients:

  • 2 Fishta Tilapia Fillets
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • ½ onion, sliced
  • 1 thumb-sized ginger, cut into strips
  • 1 cup coconut milk
  • ½ tbsp fish sauce
  • ¼ tsp black pepper
  • 1 cup spinach
  • Cooking oil, for frying

 

Instructions:

  1. Season the tilapia with salt and pepper, then fry until golden brown. Set aside.
  2. Sauté aromatics – In a pan, sauté garlic, onion, and ginger until fragrant.
  3. Simmer in coconut milk – Pour in the coconut milk and let it simmer for 3 minutes.
  4. Add the fish – Place the fried tilapia in the sauce. Season with fish sauce and black pepper. Simmer for 5 minutes.
  5. Add spinach – Stir in the spinach and cook for 1 more minute.
  6. Serve hot with rice. Enjoy!
